Vadakari is very famous dish from chennai.We chennaivasis normally make vadai curry for deepavali.Its my favarite dish.My mom uses more of coconut and less of onion and tomatoes, just like kuruma .But i like the recipe which i learnt from chellam aunty's cooking class.
INGREDIENTS:
VADAI:
Channa Dal-1/2 kg(soak for 2 hrs and grind to coarse paste)
Onion-1/2 cup
Green chilli-6
Coriander 1/2 bunch
Garlic-6
Ginger-small
Cinnamon-3
Saunf-1 tsp
Salt-to taste
METHOD:
1)Cut onion, chilli and coriander finely
2)Grind garlic. ginger,cinnamon, saunf to fine paste
3)Mix all these ingredients to ground Channa Dal ,make vadai and fry till golden brown.
CURRY:
INGREDIENTS:
Onion-1/2 kg
Green chilli-4
Ginger-small
Garlic-8
Cinnamon-2
Coconut-1 tbs
Khas khas-1tbs
Tomato-1/2 kg
Chilli powder-2 tsp
Dhaniya powder-2 tsp
Turmeric powder-1 tsp
Garam masala-2tsp
Saunf- for seasoning
METHOD:
1)Heat oil and season with saunf or jeera.
2)Grind ginger, garlic, khas khas, cinnamon,coconut and green chilli to paste.
3)Add onion and fry till dark brown.
4)Add ground khas khas paste and fry well. Add all the dry powders and fry well.
5)Add tomatoes and salt and fry till oil oozes out.Add water and boil.
6)When the curry starts boiling add prepared vadai( either broken or crumbled) and cook for couple of minutes.
Serve with Dosa or Idly.
