Here is the recipe... actually before proceeding i have to mention the inspiration to make this vadai, my neighbour ,friend,Madhavi.She had a pooja yesterday and her vada was yummy. She used all dhal and veggi.So i wanted to try that but slightly different so used Whole dhals(Legumes) instead.and the result was superb.
Ok Recipe now...
INGREDIENTS:
Chick pea-1/2 cup
Peas-1/2 cup
Rajma-1/2 cup
Green gram(whole)/Moong dhal-1/2 cup
Onion finely chopped-1
Garlic-2-3(crushed)
Green chilli-5-6(to taste)
Cauliflower finely chopped-1 cup
Cabbage finely chopped-1/2 cup
Carrot grated-1 cup
Coriander leaves(cilantro) leaves-1/2 cup
Mint(optional.I did not use)-1 tbs chopped
Saunf powdered-1/2 tsp
Salt- to taste
Oil -to fry
METHOD:
1)Soak the legumes overnight.
2)Grind the legumes and chilli to slightly coarse paste adding very little water(just enough to grind).
3)Add chopped vegetables , crushed garlic, saunf powder, salt,cilantro(coriander leafs)mint(optional), chopped onion to the legume mixture. Mix well.
4)Heat oil in a pan .
5)Make small lemon size balls out of the mixture and flatten them. Fry them in oil.
Serve with Sauce or mint or any type of chutney.
