My DH is crazy about this pumpkin pie ...every year during the fall he would get me pumpkin asking me to do this but unfortunately or fortunately it will turn out into pumpkin carving :) and the pulp will become side dish for roti :)). Last year he also got me the pie crust but ... as usual i did not make it because i was not sure how it will turnout without using egg..
pancake puppies ,I wanted to try this pie and got this recipe from pickyourown . And here it is for you all from the scratch ...fresh pumpkin...
Condensed milk-1/2 cup
Flax seed powder-2tbs
Clove,Cinnamon,Dry ginger powder-1 tbs(approximately)
Vanilla essence-1/4 tsp
1)Preheat oven to 425 degree Fahrenheit
2)Wash and pressure cook (with out adding water to pumpkin)or steam pumpkin or microwave( i don't use this)
3)Take out the pulp of the cooked pumpkin and puree it using hand blender or mixer.
4)Mix flax seed powder in water and keep for couple of seconds.
5)Now mix all the ingredients(Condensed milk, salt,clove-cinnamon-ginger powder,vanilla essence,flax seed powder) to pumpkin puree. mix well.(if needed use blender)
6 )Pour into the pie crust and bake at 425 degree for about 10 minutes the reduce the heat to 350 and bake for about a hour or until the knife or tooth pick comes out clean when inserted.
Enjoy with whipped cream on top.(I did not have so no cream )
NOTE:Please cover with plastic wrap when its completely cool to store in fridge .Do not cover when its even slightly warm.
