PALAK PANEER

Another favorite North Indian side dish which i like is palak panner.Love to eat it just like that :D
I know its a very common dish these days ,but this is bit different from the other 2 ways that i have learnt. I learnt this particular method from Kothari school of cooking.I feel adding coconut and cashew/badam makes it very very tasty and different .
INGREDIENTS:
Palak/spinach-1
Green chilli-1 or 2(to taste)
Ginger-small piece
Garlic-3-4
Onion-1(medium size)
Cinnamon- small piece
Clove-1-2
Cashew/Badam-10(approximately)
Coconut-1 tbs
Cumin powder-1tsp
Kasuri methi-1 tsp
Milk-about 1/4-1/2 cup
Paneer/tofu-1 pack
Cream-for garnishing
Corriander-for garnishing
Oil-for frying paneer and onion and cooking .
Salt-to taste.
METHOD:
1)Cut paneer/tofu to cubes and fry little.
2)Slice onion to thin strips and fry till golden brown and keep seperately for garnishing.
3)Cook spinach with chilli and grind when cool.
4)Now grind ginger,garlic,cinnamon and clove into paste.
5)Grind seperately cashew/badam and coconut into a paste.
6)Heat oil add kasuru methi and fry the ground ginger -garlic masala and cumin powder.
7)Add coconut-cashew/badam paste and fry for a minute.
8)Add salt and spinach chilli paste and cook adding milk. for some time(we can also add water to get the consistency.)
9)Add Paneer/tofu ,garnish with corriander ,fried onion and cream.
Serve with chappathi or paratha.
