PEANUT BURFI

Kadalai mittai(Groundnut burfi/Peanut burfi)....Raja ram peanut burfi is a well known brand in Tamilnadu.Its famous for its crispy burfi.These burfis are made either using jaggery or sugar.Though jaggery tastes better and also good for health,i personally like using sugar.
People also make burfi using coarse peanut.But I feel using whole peanut is more crispy.

INGREDIENTS:(approximate measurements)
Roasted Peanut-2 cups
Sugar/jaggery-1 1/2 cup
Water- 1 tsp(optional)
Light corn syrup-1 tbs(approximately)
Vanilla essence-few drops(optional)

METHOD:

1)Melt sugar/jaggery in a heavy bottomed pan.

2)Keep stirring .(Add very little water if patience is missing in the dictionary:P)

3)Once sugar melts add corn syrup and essence and keep stiring.

4)When it reaches two string consistency (hard ball or when u drop the syrup in water it should not spread and should be able to make a ball)add peanuts .

5)Mix well.

6)Pour immediately in a greased tray and cut it .

7)Allow it to cool and enjoy home made crispy burfi.
