This is simple and also my favorite one.I love coconut.... many may consider coconut as unhealthy due to its saturated fat, which is under controversy. some say the saturated fat in coconut is different from others but what ever it is coconut also has lot of other things....highly nutritious with fiber, vitamin and minerals.It has been used as medicine all over the world....like coconut oil for treating the wound and burns, coconut milk and oil for mouth ulcer, oil for hair growth, tender coconut and water for reducing body heat.. these are few.Not only in traditional medicine but even in modern medicine coconut water is used as IV fluid.Any way lets come to my favorite rice dish...
INGREDIENTS:
Rice cooked-1 cup
Coconut grated-1/2 cup(or according to amount of rice)
Onion-1 tbs
Ginger-1/2tbs
Mustard- seasoning
Urad-seasoning
Bengal gram-seasoning
Asefotida- pinch
Salt -to taste
green chilli or red chilli- to taste
Oil- 1 tsp
Curry leaves
METHOD:
1)Heat oil in a pan and add seasoning.
2)Add asefotida,finely chopped onion,chilli , ginger,curry leaves and saute.
3)Add grated coconut along with salt saute for couple of minutes(i don't like sauteing for long time as colour would change ).
4)Mix cooked rice .
Serve with vathal or curry.
