Masala peanut is one among my mom's favorite snack . she used to mix all the ingredients given below and fry in oil.But since my hubby is very particular about fried items i thought of trying this in oven and to my surprise it came really good.only thing which i felt was it was bit dry. Here i got the dried peanut and roasted it in oven in 275 degree for 5-6 minutes cooled and then mixed with the ingredients.
INGREDIENTS:
Peanut
Garlic(mashed-optional)
Salt-to taste
Chilli powder-to taste
Rice flour
Gramflour
(measurment of flour -just like cabbage pakoda)
soda bi carb
Curry leaves(chopped)
METHOD:
1)Mix flour and soda bi carb along with chilli powder and salt well.
2)Mix in mashed garlic and curry leaves with the flour.
3)Add the peanuts and sprinkle water to coat the peanuts with the flour.(do not add too much water .Just enough to coat the peanut.)
4)Apply oil in baking tray(or use non sticking baking tray) spread the peanuts and roast in 300 degree for approximately 5-6 minutes.
5)Take out the peanuts and turn them over and roast again for 5-6 min
