I have been waiting a long time to post this.Aviyal is my favorite. Combination of adai and avayil is unbeatable.We very rarely buy coconut thats the reason for posting this recipe so long after my adai post hehehee. This is a recipe that was given to me by one of my dad's friend saradha aunty form kerala.
INGREDIENTS:
Sour curds-2 cup
Raw banana-1
Snake gaurd-1/2
White pumpkin-1 small piece
Carrot-2
Beans-5
Indian Yam(Karunai kizhangu)-1 small piece
Drumstick-1
Cluster beans-5
Brinjal-2
Green chilli-7 or 8
Garlic-2(optional)
Coconut oil-1tbs
Curry leaves- seasoning
Jeera-1/2 tsp
Coconut-1/2 (grated)
Turmeric-pinch(optional)
METHOD:
1)Cut vegetables into thin long pieces.
2)Grind coconut,green chilli,jeera,garlic to coarse paste.
3)Add 1 1/2 to 2 cups pf water to the vegetables along with turmric and salt and cook (i prefer pressure cooking for 2 whistles)
4)Remove from fire and add Curds and Coconut oil and season with curry leaves.
Mix well and serve with adai/dosai or even idly tastes good.
