ZUCCHINI BREAD/ CAKE


Zucchini is a small summer squash ,which is in yellow, green or light green and looks like cucumber.I don't think i have seen this vegetable in Chennai.Zucchini is low in calories and contains folate,potassium ,manganese and vitamin A.


My husband likes this vegetable so much .We can make lot of recipes like thogayal, Kootu, Sambar ,Raitha, Salad etc using this vegetable.But i didn't know we can make Cake until srividhya,one of my friend here told me(she calls this bread).So as usual i tried and it came so soft and my husband couldn't find out it had zucchini in it.But only problem was i make very small cake since i had run out of all purpose flour and essence :(


INGREDIENTS:

All purpose flour -1 cup
Baking soda- 1/2 tsp
Zucchini(grated)-1/4 cup
Sugar(White or brown)-1/2 cup
Vegetable oil/olive oil-1/2 cup
Milk- 1/4 cup (approximately)
Vanilla essence- 1/2 cap
Nuts (optional)

METHOD:

1)Grease the baking dish.
2)Preheat the oven in 360 degree.
3)Sieve all purpose flour,baking powder .
4)Grate Zucchini (scrape the skin off)and mix it with the flour and chopped nuts well.
5)Mix sugar,oil and milk using a blender and mix well.
6)Add essence and mix.
7)Add the dry ingredients to the above mixture and pour it i the baking dish and bake in the oven at 360 degree for approximately about 40 minutes.

I guess we can also make carrot , beetroot cake /bread in the same way. I have to try those too soon.
