This is one of my favorite vegetable and favorite dish too.My amma used to make it often. She said she learnt it from our telugu neighbour.
INGREDIENTS:(approximate measurement)
Suran(elephant yam/karunai kizhangu)-2 cups finely chopped
Onion-1/2 cup finely chopped
Tomato- 1.2 cup finely chopped
Cinnamon-1
Clove-2-3
Bay leaf-1
Saunf-1/4 tsp
Oil-1-2tbs
Chilli powder-1 tsp(to taste)
Dhaniya(coriander) powder-1 tsp
Garam masala powder-1/2 tsp
Ginger garlic paste- 1tsp
Coconut-1/4 cup(ground to paste)
METHOD:
1)Heat oil and add saunf , clove, cinnamon and bay leaf.
2)Add onion and saute till pink.
3)Add ginger garlic paste and fry till raw smell disappears.Add chilli powder,coriander powder,garam masala powder and turmeric powder and cook till oil oozes out.
4)Add tomato and salt and cook well.
5)Add Chopped Suran( we can also pressure cook suran and add. If so, cooking time will be less) add water and cook.
6)When the vegetable is soft add coconut paste and cook for few more minutes.
Serve with chapathi or dosa or idly.
