This is a vegetable which i haven't seen in chennai.When i first cooked this vegetable i was surprised to see the strands .we liked the taste and started doing poriyal(curry) .
Spaghetti squash is a winter squash.Its flesh comes out like strands(like noodles)when cooked.This vegetable is rich in folic acid, potassium, vitamin A, and beta carotene.
INGREDIENTS:
Spaghetti squash
Mustard
Channa dhal
Green chilli
Salt
Turmeric powder
Onion
Oil
METHOD:
1)Pressure cook spaghetti for 2 whistles or heat water in a pan big enough to hold spaghetti quash and cook for about 20 minutes.
2)Use fork and separate the flesh from the skin to get the long strands.
3)Heat oil in a pan and add mustard channa dhal onion and chilli and saute till onion turns pink.
4)Add the separated strands along with salt and turmeric powder and saute till the vegetable becomes dry.
This curry tastes good with any Rice variety.
