Paniyaram is one of my favorite dish.We need a special pan (paniyara kal) to make them.Its very famous in Salem, my native place.The pans made there, spl those out of stone are very famous. Paniyaram made in the stone pans are softer , crispy than those made out of nonstick or other metals.
we can make both spicy and sweet paniyaram (but ingredients differ).
Vegetables(beans, carrot, potato etc)
urad- for seasoning
To make Idly batter:
Idly rice -1cup
1)Soak rice,urad and fenugreek for 7 hrs and grind them.
2)Add salt and let it to ferment overnight.
FOR VEGETABLE PANIYARAM:
1) Chop all the vegetables and steam .
2) Heat oil , season with mustard,urad.Add chopped onion, and steamed vegetables along with chopped chilli and salt.
3)Mix the vegetables with the batter.
4) Pour the batter into the holes in the pan and let it cook.
5)When done on one side turn over the balls and let it cook on the other side.
Note: Initially turning the paniyaram may be difficult but it will be easy when u get to know the proper technique
