VEGETABLE COUSCOUS(KUSKUS)

Was reading a lot about Couscous  as health food.  Initially i was not really interested in it as it looked the same a Quinoa and also its made out of grains like barley,wheat  .Its  semolina , (just like indian wheat rava or rice rava) to which water is sprinkled and rolled to pellets.( derived its name from Berber seksu meaning well rolled, rounded.)But when i first tasted this in a buffet in LV last month i felt it was different from Quinoa in every way from texture to taste ,except for the shape :)
It is said that this is healthiest among grain based products .So decided to try out couple of varieties and my first was vegetable couscous upma..(Since my husband hates the name upma i told his its vegetable couscous...hoping he wont go thru my blog heheehe :D )

the measurement again is for 1 person
Couscous-1/2 cup
Water-3/4 cup(little more may be 2 tbs)
Salt- to taste
Oil-1  tbs
Chilli powder- 1/2 tsp(optional.Can use  green chilli instead.as i ran out of chilli  i used powder)
Ginger-1/2 tsp finely chopped
Garlic-1/2 tsp finely chopped
Onion-1/4 cup thinly sliced
Vegetable of choice-1/4 cup (chopped) I used Carrot and Broccoli.
Coriander leaves- few
METHOD:
1)Boil water in a pan and add 1/2 tsp oil and salt .Add couscous , cover and cook in low flame till fluffy and soft.Keep aside.
2)Now heat rest of the oil in a pan and add chilli powder (usually for upma we season with mustard and urad dhal but in a hurry i forgot those but final product came out good :) )
3)Add ginger, garlic and onion and saute for some time.Add chopped vegetables , salt and sprinkle some water (may be 3- 4tbs) cover and cook till dry.
4)Now add the cooked Couscous . mix well with vegetables and garnish with corriander leaves and serve.
Note: Since i was trying this for the first time  i did not want to take the risk of cooking  it along with vegetables as we do for indian vegetable rava upma.
