Corn has always been my favorite.I used to love the grilled corn that they used to sell in Marina beach ,Chennai.But when my amma got cancer and started reading about that deadly disease I found grilling using coal (charred things) was one among the reasons apart from many other reasons.So from then I started loving steamed corn ...that too tastes good... but still ..to be very frank it cant match grilled one :D
Anyway...anything made out of corn(vegetarian) ...i will love it...Corn soup is one among the few soups that I love.
INGREDIENTS:
Corn:1
Onion-1 tbs(finely chopped)
Ginger-1 tsp(grated)
Garlic-1 tsp(grated)
Green chilli- (finely chopped)
Vegetables(carrot,celery,bean,broccoli)- 1/4 cup approximately.chopped and steamed
Vegetable broth-2 cup
Corn starch-1 tsp
Milk-1/4 cup approximately
Spring onion/scallion- 1 tsp chopped
METHOD:
1)Remove corn kernels from corn or use frozen corn.steam/pressure cook it.
2)When cool Bend it in blender smooth.
3)Mix corn starch with milk to smooth paste.
4)Heat little bit of olive oil(about 1/2 tsp) and saute onion,garlic,green chilli,ginger slightly.
5)Add the vegetable and saute for few seconds .Add corn puree.
6)Now mix the corn starch paste .Stir and cook .
7)Add salt and pepper to taste before serving.
8)Garnish with chopped spring onion greens.
Serve hot.
NOTE: if this becomes thick dilute with enough milk or water.Or if its watery adjust by add little more corn starch mixed in water and cook.
