kashmiri pulov



Chellam aunty.... my cooking guru...this is one of her recipes.
INGREDIENTS:(measurements as given by her)
Basmathi rice- 1/2 kg
onion-1/4 kg
Tomatoes-3
Peas-1/4 kg
Capsicum-1/4 kg
Carrot-1/4 kg
Dry raisin-100 grams
Walnut-100 grams
Cashew nut-100 grams
Badam(almond)-handful
Tinned pineapple-6
Apple-2 small
Green chilli-6
Ginger-1
Butter- 100 grams
Bay leaves-1
Coriander powder-2tsp
Garam masala powder-1tsp
Cardamom-6
Clove-6
Cinnamon-6
Shah jeera-2 tsp
Saffron-a pinch mixed in milk
METHOD:
1)Wash and soak rice.Melt butter and fry the spices after seasoning with 1tsp shah jeera along with rice.
2)Cook the rice with 2 cups of water.
3)Slice onion and slit chilli,ginger,carrot finely.Chop the tomatoes.
4)Fry onion, chilli and ginger after seasoning with shah jeera.
5)Add tomatoes and cook for some time.Add the dry powders along with salt and saute.
6)Add the cut vegetables along with peas and cook it covered.
7)Add saffron to the cooked rice and the mixed vegetables along with chopped nuts and fruits.
8)Mix well and serve .
