Bitter gourd also known as Bitter melon/karela in Hindi and pavakkai in Tamil has lot of medicinal values.According to Siddha medicine is bitter gourd juice is said to be very good for diabetic patients. Lab test also suggest some compounds in this vegetable might be effective in treating HIV. It is a good source of vitamins B1, B2, C, magnesium, folic acid, zinc, phosphorus, manganese, and has high dietary fiber. It is rich in iron, beta-carotene calcium and potassium .
It has all the goodness but its bitter right?? I know many of them don't like this because of its bitterness.I may sound weired ...but i loveeeee this vegetable for its bitterness.Specially chips that i used to buy in Adayar Ananda Bhavan ,Chennai.
I wanted to try this in oven Oil free..so This is the recipe that i tried . i wouldn't say it tasted like Adayar Ananda Bhavan Chips but it did taste good.those who like Bitter gourd will like this fat free chips.
INGREDIENTS:
Bitter gourd- 3 medium size
Salt- to taste
Chilli powder- to taste
Oil- 1 tsp
Rice flour- 1tsp
METHOD:
1)Cut bitter gourd to thin slices.
2)Add salt and leave it aside for 10- 15 minutes.
3)Squeeze the water.
4)In a Zip lock cover add rice flour, chilli powder ,oil and salt( use very little as we have already soaked Bitter gourd in salt earlier) and shake well so that bitter gourd is coated well with all the ingredients.
5) Spread them in a non stick tray and Bake in pre- heated oven(400 degree) for 10 minutes and then turn the slices and bake again for 10 more minutes. (till it turns golden brown)
6) Let it cool down and oil free chips ready....
