We, in Chennai have seen sweet potatoes only during pongal season. We keep this as a offering for sun god during pooja.After the pooja used to steam and eat or some times my mom used to makes poriyal .I knew nothing more than that.
This week my hubby had bought lots of sweet potatoes.i wanted to try something new so when browsing i found this recipe.(sorry... i don't remember the exact URL) some where.
INGREDIENTS:
Sweet potato-1
Sugar-2tsp
Salt-1 tsp
Butter-2 tbs
All purpose flour-1cup
Baking powder-3tsp
Milk- little
Vanilla essence- few drops(optional)
METHOD:
1)Boil sweet potato ,peel the skin and mash.
2) Mix mashed potato, baking powder, sugar,salt and flour along with essence.
3)Mix well if needed add little milk to get dough consistency.
4)Flour the table and roll the dough(approximately 1 1/2 inch thick) and cut into rounds.
5)Bake in 375 degree in greased baking tray for approximately 15- 20 minutes(or till biscuits turn golden brown)
6) Cool and store.
I don't remember reading about adding essence in the original recipe. Since i didn't like the raw smell of sweet potato i added the essence.
