Yuca/Cassava/Maravalli kizhangu are very rich in starch, and contain calcium ,phosphorus and vitamin C .But very poor amount of protein and other nutrients.( http://en.wikipedia.org/wiki/Cassava)
This is one among my fav... made out of Yuca. also known as cassava.In Tamilnadu we call it Maravalli Kizhangu...my mom used to make tasty vada, podimas and yummy halwa with this... will post all these recipes soon.
INGREDIENTS:
Yuca( Cassava orMaravalli kizhangu) - 1
Onion - 1
Green chillies - 4 (accd to taste)
Turmeric powder - a pinch
Curry leaves - 2 sticks
Oil - 2 tblspns
Mustard-for seasoning
Urad dhal- for seasoning
Channa dhal - for seasoning
Asefotida- for seasoning
Grated coconut - 2 tbls(opt)
Salt -to taste
Corriander leaves- to garnish
Method:
1)Scrape the skin and wash and steam the root in preasure cooker
2)Let it cool and then crumple the root .
3)Heat oil in a pan and add mustard, channa,urad and asefotida.
4)Add chopped green chillies, curry leaves and onions and fry well.
5)Now add the crushed root, salt and turmeric powder and saute.
6)Finally add grated coconut (opt) and corriander leaves.
NOTE:In Tamilnadu Maravalli kizhangu is coated with mud so we wash the root well and steam but here in states they coat the root with wax so.. have to scrape the skin and then wash and steam.
