INGREDIENTS:
Maida-2 cups
Sugar - 1 cup
Milk - 1 litre
Cardamom-4 or 5
Ghee - 6 tsp
Ghee - 6 tsp
Badam and pista chopped-5 or 6 each
Saffron-pinch
Saffron-pinch
Oil -for frying
Rice flour-1/2cup
METHOD:
1.Mix rice flour and ghee with the hand to form a paste.
2.Knead maida adding minimum water into a smooth dough.
3.Make this into balls. Roll the maida balls into flat thin round shapes using a chappathi roller.
4.Spread the rice-ghee paste on one chappathi. Place another chappathi over it. Then spread the paste on the top of second chappathi and so... 5.Now roll this chappathi from the edge to form a cylindrical shape.
6.Cut this cylinder into bits and make chappathi once again from these bits. Deep fry in oil.7.Heat milk until it is reduced to one-half of its initial quantity. Add sugar, cardamom powder,saffron, badam and pista.
8.On a plate, keep the padhir peni and pour milk mix over it. Serve immediately.
