PAPER ROAST


simple crispy dosa(crispy south Indian pancake).. favorite of kids.Actually my favorite too :) love paper roast.. Its the same batter that we use for idly and ordinary dosa only difference is its thin like paper and crisp and some  use raw rice too for the batter so here is the recipe using raw rice. Guess this is how it got its name PAPER ROAST. In Chennai we make many varieties of dosa... in fact these days they have restaurants selling more than 100 dosa varieties.And being a chennaivasi.....i LOVE dosa with spicy coconut chutney ....umm...yummy...
INGREDIENTS:
Idly rice(Idly puzhungal)-3 cup
Raw rice-1 cup
Urad dhal-1 cup
Fenugreek-1 tsp
Salt- to taste
METHOD:
1)Soak rice and urad (along with fenugreek) separately for 6-7 hrs.
2)Grind Urad to smooth soft batter adding water little by little.(you can see the batter increasing in quantity when we grind properly)
3)Remove the urad batter and then start grinding rice. grind this to smooth batter adding enough water.(grinding rice after urad helps urad get better quantity and also cleaning the machine is much easier after grinding rice)
4)Mix rice with urad batter along with salt.Add water if necessary .
5)Let it ferment overnight.
6)Heat a dosa pan and pour the batter in the center of the pan and spread it into thin concentric circles.
7)Smear oil a little on sides and cover it with lid and cook in medium flame for couple of minutes.
Now ready to est with spicy chutney or chutney powder(podi)
