PALAK KOFTA

This is one of my favorite recipes which i learnt from chellam aunty.Spinach contains a high level of iron, compared to other vegetable and meat sources.Spinach also has a high calcium content. It is a rich source of Vitamin A,C,K,E,Magnesium and antioxidants .Paneer is rich in calcium and protein.Though it may be rich in calories because of cashew paste and paneer yet it is nutritious and delicious dish.


INGREDIENTS
Spinach-1 bunch
Green chillies-2 or 3
Cornflour-2tbs
Paneer(cottage cheese)approximately 150 gr
Salt-to taste
Bread crumbs- to coat
Ginger-small piece
Garlic-3 or 4
Cashew-approximately 20 gr
Kaskas-1 tbs
Chillipowder-1/2 tsp(to taste)
Cumin powder-1/2 tsp
Garam masala powder -1/2 tsp
Oil -to fry
Onions-chopped 1(medium)
Kasturi methi-1/2 tsp
Milk-1/2 cup





METHOD

1)Chop spinach and cook with 1/4 cup(approximately according to amount of palak)of water , till it becomes dry.
2)Prepare paneer and grind it with spinach into thick paste.
3)Add half of the chopped onion,cornflour,salt and 1/4 tsp of cumin powder,chilli powder and garam masala powder to the spinach paste and make small balls.
4)Roll the balls(kofta)in bread crumbs and deep fry till golden brown in medium flame.
5)Grind ginger and garlic to smooth paste.
6)Grind cashews,kaskas,green chillies separately to smooth paste.
7)Heat oil in separate pan and fry onions till golden brown.Add katuri methi and ginger garlic paste and fry well.
8)Add garam masala,chilli and cumin powder and fry.
9)Add little water about 1/4 cup and cook for few minutes .Then add ground cashew paste along with milk and cook for a while.
10)Add koftas before serving and garnish with coriander(i did not have coriander so just decorated with mint leaf :) )and cream.
