MANGAI INJI THOKKU



Maa inji,very aromatic, healthy root belonging to ginger-turmeric family.My mom used to make pickle and thokku.So... here is my favorite recipe.

INGREDIENTS:
Mango ginger-1 cup
Green chilli - ot taste
Tamarind- pea size
Salt- to taste
Oil
Mustard- seasoning
Asfetodia-seasoning
Fenugreek-seasoning(opt)
METHOD:
1)Grate or chop manga inji and green chilli
2)Grind manga inji, greem chilli, tamarind and salt to smooth paste.(add water only if necessary)
3)Heat oil in a pan and season with mustard,asefotida and add the ground paste.
4)Cook till oil oozes out.
5) Finally add powdered(dry fried) fenugreek.

This thokku goes well with any rice variety , idly dosa.I also tastes good when mixed with rice.
