VADAGAM

I don't know how many know about vadagam... they are used for seasoning. They give a nice flavour to our dishes specially vathakkuzhambu.Even ordinary carrot sambar will taste and smell so good .Apart from all these.. we can make tasty Thogayal with Vadagam, which will go well with Curd rice.

INGREDIENTS:

Onion- 4kg
Garlic-750 gm
Urad dhal-4cups
Mustard-50 gm
Methi-50 gm
Curry leaves
Turmeric powder-
Salt- 4cups

These were the measurements that my mom gave.Since i am not used to doing in big quantity i reduce the amount of the ingredients accordingly.

METHOD:

1)Chop onion finely.
2)Crush garlic lightly.
3)Crush urad lightly.
4)Mix onion,garlic,urad,mustard.methi,curry,turmeric and salt.
5)keep it covered for 24 hrs.
6)Apply gingelly oil in hands and make balls.7)Dry in sun daily(Make balls daily applying oil).


Note: when u make balls , for first few days we will get water from the onion. so we have to put the balls daily in that water till all the water gets absorbed and dry the balls well.
