ASPARAGUS PORIYAL

Asparagus.. many in India would not have heard ,though it is available in big stores in big cities.
Asparagus is low in calories and provides substantial amounts of two antioxidants—vitamin A and C. It truly shines as a source of folate and has a good amount of fiber.Not only this It has a great medicinal value too... it is used to treat urinary tract infections, as well as kidney and bladder stones.Is considered a diuretic which means it is a good anti-inflammatory - best for arthritis, asthma rheumatism, and even water retention.Helps detoxify your body,lowers cholesterol.not only this but it has been known to increase the success rate of chemo therapy .The health benefits of this wonder vegetable goes on....

When i came here and saw this veggie i wanted to try but did not know what to make out of it... till i tasted it in my sil,shashi's place. it was tasty.She taught me to make this recipe..

INGREDIENTS:

Asparagus- 1 bunch
Greenchilli-to taste
Mustard-for seasoning
urad-for seasoning
Garlic-2(chopped)
Turmeric powder- 1 pinch
Salt- to taste
Oil-1 tsp
Rice flour-1 tbs

METHOD:

1) Chop asparagus and garlic
2)Heat oil , add mustard and urad.
3)When mustard splutters add garlic , green chilli, asparagus (in the same order)Add salt and saute.
4)Sprinkle little water and saute for 10- 15 min.
5)Mix rice flour to very little water and add to the vegetable and cook for few seconds.

Note: This can also be mixed with rice and had as Asparagus rice.
